Curd rice is a famous type of dish eaten all over the country. In Hindi, curd rice is called dahi chawal. It originated in India. Dahi chawal of curd rice is also known as yogurt rice. The word curd rice is a combination of two dishes : curd and rice. Curd is the substance which is formed by the souring of the milk. These are thick soft substances which are made using sour milk. Curd rice originated as a dish of South India but it is eaten widely in North India during the summer. It is eaten mostly with pickles.

Preparation of curd rice is very easy. It is just made by combining the milk and curd. Firstly, rice is prepared by steaming or cooking. Then, rice is kept in a cool atmosphere so that the temperature of the rice becomes normal. When the temperature of the rice becomes normal or cool, then mustard seeds, curry leaves, green chillies, asafoetida, cumin seeds, ginger are put in the rice. After this, curd is added to the rice along with the salt. 

There is also another way to prepare the curd rice. You can just steam the rice along with the curd (mild). After that, put the salt in it. After this, you can tamper this with dry chillies, mustard seeds, black gram and curry leaves. You can also garnish curd rice along with the raisins, grated carrots, fried cashews, green grapes and pomegranate seeds. It can be served either chilled or lukewarm.
