For the last 50 yrs, we have heard that saturated fats are bad and polyunsaturated fats are good. But it's not true!
Another thing we have heard is that vegetable fats are good and animal fats are bad. That’s not true either!
The truth is, natural fats are good and processed fats are bad.
Another thing to differentiate is between omega-3 and omega-6.
Omega 3 are anti-inflammatory and omega 6 are pro-inflammatory.
Vegetable oils are seed oils and grain oils like soy, corn and canola oils. They are omega-6 and causes inflammation
While preparing corn, soybean and canola oil, they are heated to such a high temperature that they become rancid. A lot of chemicals are used in preparing them and bleaching them. Soy oil is dangerous for our brain too.

Coconut oil, olive oil, ghee and butter are great choices. Coconut oil is pro-inflammatory even though saturated but extremely healthy. It contains 60% of short-chain fatty acids that are an excellent source of energy and create no inflammation at all! it€'s very well for cooking as it sustains very high temperature and does not become rancid.
Olive oil is a good choice but make sure it is organic. Extra virgin olive oil is very good for salad dressings.
Butter and ghee are equally good but cows are buffalos should be grass fed because if they are corn fed then it will contain more of omega 6.
