Pumpkin soup with roasted makhanas
Wash and cut a yellow pumpkin with skin in even chunks. Then boil the pumpkin with + carrot+ beans+bay leaf and rock salt. .Then take off the bay leaf and puree it in a blender.
Toast the makhana with ghee. Make a roux by cooking potato flour in ghee. Transfer the pumpkin puree in a pan and adjust the consistency by adding water. Add roux to thicken the soup & add makhana to the soup.
