Not just indians, but all nationalities use oil in their daily lives. Only the type varies. As far as indian cooking is concerned, any of the traditionally used oils, in moderation are ok. It depends on what region you are from, your tastes, style of cooking, availability & cost. Eg: here is kerala, we use quite a lot of coconut oil in our cooking, but to someone from north india, it wouldn't sound very appealing as they mostly use it for hair care! but avoid vanaspathi.
