Both white sugar and jaggery are derived from the same source – sugar cane. Sugar crystals have no natural nutrients while jaggery has essential nutrients like magnesium, calcium, phosphorus, potassium, iron, copper and zinc. Jaggery contains the same amount of sugar. Both white sugar and jaggery have a high glycemic index. The absorption of sugar in the body takes place at a faster pace and thus raises blood sugar levels faster whereas Jaggery has sucrose which is a complex sugar and takes time to break down when consumed, but sugar levels go up within a few hours. So its not advised to take jaggery for diabetics. Sugar in all forms should be restricted.
